Amabuki brewery is located in the center of Northern Kyushu. The area is known for bountiful harvests of sake rice and the smooth groundwater of Mt. Sefuri. Continuing their ancestor's legacy, Amabuki uses flower yeasts to give their sake a new twist and unique personalities. It is Amabuki's mission to create aromatic Sakes to be enjoyed at leisure and relaxation.The Amabuki “Gin no Kurenai” Junmai (a.k.a. Pink Lady) is a rosé‑colored sake from Amabuki Shuzo in Saga that gets its vivid pink hue from ancient black/red rice and flower yeasts.lower yeasts such as pink nadeshiko, strawberry, and “Queen of the Night,” a house specialty of Amabuki. On the nose it shows light floral and rose‑petal notes with red‑fruit tones like raspberry, cassis, cranberry, and strawberry. On the palate it has a silky mouthfeel, lightly sweet to off‑dry, with muted but clear red‑fruit undertones, soft umami and a touch of astringency/tartness from acidity; which give it a crisp, refreshing almost wine-like cut. Think dry rosé / pét‑nat meets umami sake rather than dessert wine. These flavors are a perfect match for dishes such as Tuna sashimi, crudo, shrimp, beet or citrus salads and soft cheeses with fruit accents such as strawberries, and fresh figs.
