Amanoto “Heaven’s Door” is a Tokubetsu Junmai from Asamai Shuzo in Akita, made as a classic “grower’s sake” where the rice farmers also brew the sake. The epitome of the “local” farm-to-table movement, this sake is brewed by the Toji Moriya - san a critically acclaimed chef who only uses rice, water, and labor from his own prefecture. Ama No To translates to “Heaven’s Door,” referring to the prefecture which is at the northernmost tip of Japan. The label image is an icon of good fortune from Amaterasu, the Shinto Sun Goddess who is believed to have brought light to the world and cultivated Japan’s first rice fields. On the nose we get aromas of salty sourdough, passion fruit and guava; on the palate it is medium‑bodied, slightly dry, with mouthwatering apple, nutty tones, and savory salinity; very clean, rice‑focused finish.with a lively cider-y texture. Amamoto “ Heaven Door” was designed to elevate food rather than dominate it and is a great pairing choice for mezze platter, pickled beets, greek salad,and wild mushroom dishes.
