The nose lifts fresh green apple, lemon zest, and a light floral note over a soft mineral edge. The palate is dry and crisp, with tart apple, citrus, and a hint of white pear carrying through fine, persistent bubbles. The finish is clean and refreshing. A natural for Shabbos kiddush, Rosh Hashanah and Yom Tov toasts. Also beautiful with hot smoked fish, herb-roasted chicken, cheese boards, and fried latkes.
