Kanbara 'Ancient Treasure' Yamahai Junmai Genshu Koshu is produced by the Kaetsu brewery which is known for its powerful, big, bold sake from Japan’s most popular brewing region, Niigata, which is otherwise known for producing light, clean sake. Kanbara’s bold style comes from brewing sake that is Muroka (not charcoal filtered).
Kanbara “Ancient Treasure” is a rich, long‑aged Yamahai Junmai Genshu Koshu from Niigata, built for intense umami, oxidative complexity, and dessert‑wine style pairing similar to Madeira/Sherry or noble‑rot dessert wine. On the nose we get sea salt, toasted sesame, toffee, nuts, honey, cocoa, and oxidative/sherry tones. On the palate it is full bodied with layered flavors of our apple, tart orange, chocolate, apricot, nuts, and hot honey‑lemon tea, with a very long finish. We suggest pairing this sake with caramelized onions, figs with goat cheese or seared foie gras ,duck pâté, rich meats and game, roasted dishes, and end‑of‑meal cheese or chocolate‑accented desserts. dessert courses.
