Kurosawa Junmai Kimoto Sake is a premium Junmai grade Sake made from just rice, water, yeast and koji using the traditional Kimoto method which picks up on ambient microbes from the brewery; a technique that gives the sake its robust and rustic character. On the nose we get notes of bananas, mango, and soft tropical fruit, with hints of smoked herbs and spice. While on the palate you receive abundant flavors of spiced baked apple, caramelized bacon, coconut custard, cashew fruit, honeyed jicama, and endive, plus green apple and dried honey. Serving chilled will keep the sake lean and acidic, gently heating to 100F or more will bring out sweetness and chocolate notes. We suggest pairing the Kurosawa Junmai Kimoto Sake with hearty and umami‑driven dishes such as boiled pork, smoked salmon, oden, karaage, yakitori, tempura, tripe stew, cheese, and other rich meats or seafood.
