Beautifully pure aromas of freshly cooked agave, sweet potato and ripe green pears with delicate notes of cinnamon, lime blossom and wildflower honey. Hints of dulce de leche, white pepper and tropical fruit emerge with air. Medium-bodied and wonderfully silky, with a rounded texture carrying layers of sweet roasted agave, fresh citrus, green apple and subtle herbal spice. There's an attractive interplay between the natural sweetness of the agave and a gentle peppery character, followed by touches of mint, mineral freshness and delicate earthiness. Clean and precise through the middle, with excellent balance and very little alcoholic aggression. The finish is smooth and refreshing, showing cooked agave, lime zest, cinnamon and lingering white pepper. Elegant, beautifully composed and remarkably approachable, with impressive purity of fruit and a genuine sense of agave character.
