Immediately expressive aromas of star anise, fennel and fresh mint with coriander seed, delicate licorice and an intriguing cool herbal character. With water, the aromatics broaden considerably, revealing sweet fennel, dried flowers, lemon peel and subtle earthy root notes. Medium-bodied and silky, with anise initially dominating before mint and coriander provide freshness through the middle. There's gentle sweetness, but considerably less of the dark licorice character associated with many pastis. The palate becomes softer and more aromatic as it louches, with fennel, herbs and cooling menthol-like notes extending through a surprisingly persistent finish. Straightforward but distinctive, refreshing and exceptionally effective at what it was designed to do. A classic French aperitif that should absolutely be tasted with cold water rather than judged neat.
