Yucho Shuzo has produced Sake for over 300 years in Nara prefecture; considered to be the birthplace of Sake in Japan. The brewery is proud to use Tsuyu Hakaze rice, native to Nara Prefecture in addition to the fresh water from their deep wells in making elegant and fruity sake. The Kaze no mori is one of the most sought after sakes in Japan, with a real cult following among sake brewers , sake sommeliers and sake drinkers. The Kaze No Mory ‘ Tsuyu Hakaze - 507 ‘ Junmai Daigingo has a complex aroma of tropical fruits (mango, muscat, pineapple), stone fruit, soft florals and rose water. On the palate it shines with a silky, dense fruit core but very light on its feet, with fine bubbles. We suggest pairing this sake with crudo, toro, caviar, uni, butter-poached lobster), or minimalist yakitori/robata with salt to emphasize the contrast between richness and airy texture.
